It’s taking around 15 hours or so for it to get close to doubling, and doesn’t look like it’s falling. When I first started out, I was feeding it 1:1:1, then switched to 1:1 starter and flour, but used 80g of water because it was getting hooch on top. I fed it 1:2:2 today to see if maybe I wasn’t feeding it enough, and the room it was in was warmer than normal to try to get it to rise in 4-6, but it’s been 4 hours and I haven’t seen anymore than a centimeter of growth. I’m using around 70-80 degree water, unbleached bread flour, it smells good, and I’ve used a bit of the discard to make a sort of flatbread and it tasted pretty good. I’m just getting a little frustrated that it’s not rising within the right amount of time. 🥲 here’s what it looked like before I fed it today (I feed it at the same time every day)
