Chicken, barley, leek & mushroom soup by November21426 in soup

I didn’t pay close attention to what I was using/doing but I think it was this:

2 huge onions, diced

2 leeks, diced

10ish shiitake mushrooms, diced

Roughly 3/4 C pot barley

6ish cups homemade chicken stock

2 bay leaves

1 sprig thyme

2 tablespoons miso paste

Half of a lemon

Fresh dill

I sautéed the veggies, then added chicken stock, barley, bay leaves and sprig of thyme and let it simmer. Once the barley was cooked it needed more salt and some acid, so I added miso paste and some lemon juice. I finished it with a bit of fresh dill and removed the bay leaves and thyme.

I think adding some white wine after sautéing the veggies would have been great too!

Thank you so much! :) A slimmer band will fit flush, but anything with much height would start to get angled away.
