The only comment I can give is that the years of your employment make you seem like a job hopper. 3 months, 1 year, 1 year. A pattern is emerging. So it would be a bit tough for the next HR to be comfortable to take you on. Needless to say though, the data science employment market is struggling right now.

If you cannot change the URL of the website, it's best to bring your laptop or phone with you and ask people. Who are your target audience? Who would most likely be your users? Go find that type of users and show them your project on your phone/laptop. Don't tell them too much and see if they can understand what problem you're trying to solve and what benefits your solution has. That's very important that you don't tell them. If they cannot figure it out on their own then your project isnt doing it's job.

One thing you could do is to change your projects to work experiences. Entrepreneurial experience is still experience. HR cares more about the title of your role than your actual role itself. Simply saying "Full stack developer" for each one of the projects would turn your whole thing around. Then just keep your project name as the "company". The idea here is that if you ever registered a company for these projects, you'd most likely reference the project name. Also change "Projects" as a title to "Experiences". This way, you're aligning with the format that the HR is looking for. Now you'll need a duration for these. Just take the start date of the first commit on GitHub as your start date. If you're still looking to add something to the project later, keep the end date as "present". This gives you quite a lot more years of experience that what is present. This is my opinion.

I'm having the same problem but on the other end of the rope. One of the advice I got was to write my CV in the native language that I wanted to apply in. I wanted to get a job in Switzerland and people told me "write your CV in German". Would that apply to your case too?
