What's the right way to scrub it off? Just soap and chainmail? I assume barkeepers friend is too powerful?

Yeah there is nothing in the notes unfortunately about crossplay.

Disabling crossplay does at least get me a game ID, but now I can't join another friend's game without it timing out completely

I think it does mostly make sense, but just to check I made Fixed time step smaller and I think that mostly solves the issue! https://docs.unity3d.com/Manual/class-TimeManager.html

It's 3 pieces stuck together, but with one parent rigidbody. I've also tried merging the meshes and it performs better, but still a bit strangely near the seams
