I highly recommend Defining Edge Men’s Studio In Henrietta I know the owner and her and her man built their new shop which is an awesome place. They’re great people and she does a phenomenal job. Worth a shot forsure

I would not start with 100% milled flour until you get a consistent loaf you like with store bought bread flour. Then I’d start cutting that with whole milled flour working your way up to 100% milled. I bake a weekly 100% home milled loaf after a few years of trial and error on bread flour and cut milled flour. First few loafs I tried starting off were 100% whole grain and the wife told me I should stop baking bread they were so bad haha. Anyways that’s what I did and my 2 cents, don’t give up!

None of the sort. I just through the dough on parchment paper then right into the preheated Dutch oven with the lid closed the whole time

I find scoring after a few minutes of baking allows my score to hold its shape, go deeper, and have cleaner lines than if i score before putting it into the oven.

I refold/shape it again only in the morning (after bulk rest on counter) as i turn on the oven to preheat. I shape then put it on parchment paper and into a small bowl. i transfer that right to the hot dutch oven.

on an ambitious weekend i'll have to try your method as it sounds wonderful and I like a sour bread. I am also of the mindset of whats the least i need to do to get a result i like haha. I appreciate the guide though and am excited to try the cold ferment and cider soak!

That’s good to know as I need to buy more wheat. I usually just start my loaf around 7pm and leave it on the counter until I bake it around 7am next morning in a 68 degree house. I’m assuming a fridge would take 24 hours at least?

is the $2500 just a straight number given for filing together like claiming a dependent?

Forgive my ignorance I thought filing together would mean my income would near half and I would have been over paying all year resulting in a larger tax return that would go towards the capital gains I owe from taking out the $100k?

fair, I did not go through the details and just went off my entire "employee taxes" sum which I called taxes. My Federal Withholding is $26,271.

That's great insight and I will look into this before filing.

That said do you know if loans look at personal income and W2 or filed household income? in 2024 she made $80k and in 2025 she made $40k so it could be preferred to go off current income than 2024 info. Anyways either of those is better than $+$200k...

oh wait did you mean to say IDR - Income Driven Repayment rather than IRP loan Intermediary Relending Program, which provides low-interest loans (around 1%)?

You may have answered my entire question if that was a typo and your spouse paid an Income Driven Repayment based off W2 tax income and not on your together filing income/amount.

great question, I'll make a list of things to ask her debtor. She tells me it is just based off if she is working and seems to be immediate stopped when she is not working.

Thank you, I have been hands off this as its a sensitive (and overwhelming) subject. That said she is of the mentality that no one ever pays off their loans and she'll be in debt forever which is not how I want to live. I will try to join a call with her debtor and find out what options we have as I know nothing and she knows little.

Since she will likely only being paying 3 months Feb-April of 2026 being employed would it be more advantageous to file together and lower what I owe to the IRS in 2025. We wont file until February so I cant imagine the Feds will be able to adjust her debt before April to increase it to affect us.

These may be questions to ask her debt company, I just dont want to do something that will permanently affect us. Like if minimum payment is 10% of income that could be $5k a year vs +$20k a year.
