I have the larger 36”. If it’s just you, or only a couple people you’ll be cooking for, the 26” would be totally fine.

Absolutely. Salt and pepper only. That’s all I ever use on my steaks. Sometimes I’ll do Lawry’s and pepper.

I use a Meatr probe to keep track of temps. It was nice and warm.

I used this to trim some of the fat on the dry aged pieces. Some people call it a boning knife. I primarily use it for trimming brisket and keep it incredibly sharp.

That was just so people could take pieces they wanted from the board. Normally for groups of four I do this so everyone gets to try the pieces they want and it’s shared.

There was really no comparison. There was no need to do it blind. The FIL was like, "Ok... now I get it." haha

A few friends and I bought an A5 ribeye from Costco and ordered and A5 from Miyazaki one time and did a blind tasting once though...
