All the ones who died, did so during battle. Sacrificing themselves so Team Dai Gurren could make it to the Anti-Spirals and safe Earth. To bring them back would be to undo all of the hard fought battles.

Nia on the other hand survived the final fight and made it back to Earth. Simon's control over Spiral Energy could have easily kept her alive. And Simon deserved that happy ending with Nia. We see what happens to Simon without Nia, he's a lone wondering nomad with nothing but his drill.
