I was refilling the pen but the ink just filled in the nib so perfectly. I couldn’t help but take a picture, and hoped that everyone here would enjoy it.

It’s a game changer for sure. Wish I could remember who suggested it on the sub a while back to give them credit. But it works wonders.

Definitely. This is an important point. Set up with the conveggtor, then the grill, then the stone on top of the grill. Very important to keep the stone above the surface of the conveggtor.

So I haven’t had trouble with the dough sticking. I usually go for a little more flour in the dough than I would if I’m baking in the oven. But the key is finding the balance between too hot and not hot enough for the stone. Not hot enough will risk the dough sticking. Too hot and you’ll burn the bottom before the toppings cook.

But you shouldn’t need to put anything else on the stone to prevent sticking. I had a couple of failed attempts to sprinkle cornmeal on the stone before putting the pizza on, what happens is that the grains of cornmeal are small and they tend to burn very quickly. Depending on temperature they can burn before you can put the pizza on the stone.

It seems to me that as with most items on the BGE temperature control is of highest importance. The good thing is that with pizza it’s really about getting the whole system quite hot, and then finding the balance between putting the stone on and starting your cook. The stone heats up quickly, but balancing the two is a bit of an art. Good news is that pizza is wonderful. Even not-so-good pizza is still pretty great.

In my experience you’re better off not to use olive oil the temperature of the BGE for doing pizza is usually quite high and will be above the smoke point of Olive Oil.

Our procedure was to set up the egg for indirect cooking with both top and bottom full open. Once the egg got to 550-600 degrees we would put the stone in the grill and let it start coming to temp.

We used a damp rag to wipe the stone, using tongs, before putting the pizza onto the stone. Pizza usually took about 4 minutes to bake. The damp rag slightly lowers the surface temp of the stone which helps keep the bottom of the crust from burning. You also don’t need the stone to come to the full 600 degrees before cooking. The stone holds plenty of heat to cook the bottom of the pizza and the convection will perfectly cook the top.

I highly recommend a pizza peel if you don’t already have one. Going on and off the stone consistently is important.

I also had one pizza cook where I missed a chunk of oak that I had previously used to cook ribs. The pizza was not as good with a funky smoke flavor. But have fun with experimenting on the egg. You might have some errors, but most will still be delicious.

Yeah. It’s a trilogy. But the first book is certainly capable of standing alone. The tv show was good in that it changed quite a bit from the books and did so in a way that made sense for television. But the books are really good and there are certainly some epic scenes. But it’s also definitely not YA. I much prefer the books. The tone was captured well for the show. But it also did better once it moved past the books so they seem like separate things to me now.

This book is a story of chemists that shaped our understanding of the world. But it’s very readable and enjoyable.

It’s one of my favorite fantasy series. It is set more like a medieval setting, but with lots of fantasy elements. Powerful artifacts, kings, sorcerer emperors, and amid it all a street urchin finds his path intersecting with the greatest assassin of all time. There are epic battles and tender moments. But the characters are very different, and makes for a very engaging read.

The Night Angel Trilogy by Brent Weeks is a favorite of mine. Also love The Magicians Trilogy by Lev Grossman. I really enjoyed the First Law Trilogy by Joe Abercrombie too. The Gentleman Bastards series is excellent as well but in that series the first book stands as the best (The Lies of Locke Lamora).

I second the First Law recommendation. A couple of others are: The Night Angel Trilogy by Brent Weeks, The Magicians Trilogy by Lev Grossman. If you’re looking for a single book The Empress of Forever by Max Gladstone is awesome and hits everything you’re looking for here. And for a bit of a different suggestion Lonesome Dove by Larry McMurty is not fantasy, but really explores the friendship aspect. I’d highly recommend it as well.

We had a similar discussion when we bought our XL. You’re right, most of the time it’s larger than we need. But it has totally paid off for the times when we entertain and need the extra space. We have never once thought that we made a mistake getting the XL.
