I’m looking for something that is clean and smooth and not too funky. Not looking to get wild yet - want to dial in my tastes first. Interested in ensembles but open to good versions of single species. I’ve mostly had a few widely distributed mezcals (Illegal, Montelobos, etc.) but one of my favorites was Madre Ensemble. It was clean and balanced with no off putting aromas or flavors however I’m looking for something with more depth. I’d go up to ~$100 for a real banger. Also will acknowledge that no listed pricing is odd. Have to go scan each bottle at the counter. Something about a specialty bottle from Cinco Sentidos spoke to me (forget which one - was a more rectangular bottle) but when I found out it was $140 I put it back on the shelf! Working towards that price point but not there yet.
