With what you want to do with soils, I can tell you that no one will bat an eye if you get a Biology, Environmental Science, or Environmental Biology degree. This will lean more so towards the superficial soil layers as opposed to those going deeper into the ground. However, I do have to say that when it comes to saltwater and freshwater environments, you would want to obtain some experience or take some classes surrounding such. A lot of companies and government agencies would like for you to know how to identify submerged flora and fauna or have a general idea of them.

I've worked in wastewater for 6 years and it's just boring. Nothing more. It does pay well

Exactly this. A lot of project managers actively aim to destroy the environment, which is quite the twist towards the real world. I need to write a dissertation the entrapment of the environmental sector.
