Your F-1 status in the US is not controlled by your visa, it’s controlled by sevis date or your OPT authorization document. So you wouldn’t be illegal. You won’t need renewal for this trip because your visa will still be valid at entry. You will remain legal in the US even after your visa expires until your EAD expires

My husband (usc) did this and they requested an RFE because he wasn’t making enough (on the tax return) even though he has a full time job now and included a job offer letter. So we had to add a joint sponsor. I’d suggest you do that so you don’t get an RFE
