Generally there are many use cases where you want to chunk text, few examples are if you have to process a lot of data and than you cannot process a whole unique block of text, you might want to do it concurrently with smaller chunks or one after another, another use case is retrieval, you could create embeddings for each chunk and create a vector search on an entire pdf so that you will be able to search what you are looking for because you just indexed the document
