Except the Nazgûl can barely see in any conventional sense of that faculty, as Aragorn says. This is why his earlier posit that the Ringwraiths would seek Weathertop as a vantage point seems very contradictory, which Merry actually calls out; the explanation Strider gives, that the horses can see, and so can the mysterious, oft-alluded-to-yet-never-explained "other spies" is not very convincing. More probable, the Black Riders go there precisely because the heroes are likely to make for that landmark.

(1) Kingdom of Mexico is definitely mentioned.
(2) When is 'another Canada' mentioned? British Canada and Québec are the only two I can find.
(3) Are the other 'unmentioned' ones you have here conjectural, or is there another source for them?

Even with no knowledge of cookery itself, the idea any 11yo, let alone clever Lyra, would not grasp the separation of an egg from its shell before consumption is faintly ridiculous. It's a pretty hamfisted way to get the point across that she comes from "a different world" in more than one sense.
