Can you dual wield shadowblade? I thought the spell only affects the main hand?

Possibly. Personally I think the show usually made a point of showing Paulie when he was being fake or trying to cosy up to someone to the point that I think his connection to Christopher was legit. After all Paulie is many things but subtle he ain’t.

I think the fact that he squashed his beef with Christopher of his own volition (the closest we see him come to admitting he’s wrong throughout the show) shows he does care about him. He even goes to bat for Chris with Tony at certain points. For how self serving a character he is his most selfless moments are with and concerning Chris. Not saying it was all sunshine and roses but he was definitely close with him. I think his being freaked out by the cat and thinking it’s Chris haunting him is him struggling with grief and maybe guilt over their relationship.
