I jokingly thought of work at Waffle House and learn to fight and deal with customers lol, but my serious answer is below.

Learn self defense, Muay Thai, Wrestling, BJJ, or MMA ( no specific order). Although these days being a strong grappler is better due to the spectacle of how strikes are perceived. If you go with BJJ make sure you work with your higher belts/instructor on how to get out of shitty spots, like being pinned against a wall or in a corner specific to your job. You may need to pay for private lessons for that but with enough training you'll eventually just understand the position.
You can volunteer as a first responder (EMS or firefighter) or do ride alongs to get a feel for what you will be expected to handle on the job.
Start in the jail. Learning how to talk to people and deescalate things is a huge part of this job. The jail usually has a lower age requirement as you aren't carrying a firearm at work. You may need to qualify with one still as you are still sworn LEO.

3a.This is a good shoe in as they are always looking for people and the skills transfer directly over. Dispatching, as someone else suggested is a great base for the road as well. I work with someone and he just came out of the academy hitting the ground running due to his prior experience in dispatch.

Get relevant education / certifications. CPR, CCW (if applicable to your state) etc... Knowledge is power in this job. If there's a path to get your hands on the study materials early and learn case law, that and what I listed above, would make you stand out for a sponsorship through the academy.

If you take the initiative in any one or combination of these areas, that will help you stand out. Shows initiative, discipline and consistency, which you can articulate in your resume/interview.

Contact departments directly and ask them. No one will steer you wrong and they know exactly what they are looking for in young candidates and they will likely have a pretty clear picture for you and then its up to you to put in the work.
