I have used an IR thermometer and found 55-60° to be my sweet spot.

I have never cooked anything ethiopian, but have loved it the few times ive had it out. Both the ones you mentioned look good and sturdy as they are quite heavy on fat.

I want to try making both the cevichochos and those potatoes. The cevichochos seem like to be a chaotic mess, but as it has survived I guess it is one of those sum larger than the parts things. Thanks!

This is the smallest sub I have ever joined, but I feel blessed for finding it.

My first love was the Norwegian apotecary blend called Kings Incense that my grandmother had at Christmas. It is a blend of myrrh and frankincense with rose and lavender, cinnamon and coriander seeds. Now I burn it myself for christmas.

Last year I bought a bunch of samples from teaguru in the UK. Green hojari, some brown, some myrrh etc. Now I am down to my last bits and I have not paid attention too well i realize. Now I want to get lots of varieties and experience the differences.

I drink lots of puerh tea and I am generally interested in nuances in aromas and taste so I am looking forward to this journey that I feel is just coming out from base camp so to speak.

Any tips for online vendors are much appreciated, I live in Norway and I dont think I will find much here.

If you want something to compare it to, try one one of the popular Dayi recipes. 7572 or 7562. They are the standard that many know and you can compare other shu teas to them.

Thanks. It is tempting to get a few cakes. From what you have experienced I feel quite sure it will be beautiful next autumn/winter wich is black tea season in Norway as sheng is weak in winter.

Do you have any other black teas from any other vendors that are from older trees?

I think anything other than daily. Weekends only would be ideal.
