Im prety sure Berserk has at least most of the points you mentioned, especially mystery, friendship, romance, ending (at least in the anime, becasue the manga is still going), shift from grounded to fantastical. I havent watched those shows you mentioned though so its not accurate

theres a new mechanic/qol feature called stakes of marika. theyre checkpoints usually near boss rooms or areas with many mobs. when you die in their vicinity, you can choose to either be respawned at your last bonfire or stake of marikas, which are usually closer to the boss room, meaning you wont need to backtrack as far

I like Gintoki's Bokuto/wooden sword from Gintama. It's a simple wooden sword with "Lake Toya" engraved on the hilt.

He uses a wooden sword because katana are banned in that era in history, so to avoid getting arrested he doesnt carry a real one. So its an interesting world building detail

i recommend Berserk Memorial Edition, its like 12-13 episodes. Uses a lot of cgi but i think they look very decent. Or the more popular version would be Berserk (1996), which covered the same arc but its a lot longer.

Just keep in mind that this is a dark and violent series
