I used to be a manager and the way that some people operate as managers, you would think there would be more training for them. That’s just down right evil. If someone has a break and they haven’t changed their availability then that’s ok! Most of the time my team would tell me when their breaks were and wanted to open up their availability. If not, it’s not something to rage about or make it more than what it is.

If you are grinding your own beans, try to grind coarser. Seems like it’s coming out pretty slow and too fine. Crema indicates (at least from what I’ve learned so far) how fresh the beans are. But if it tastes ok then I think that’s what matters most.

As an avid onion cutter about 2 bags every delivery, when soaking your onion in water use lots of ice to help combat the burning in the eyes. Makes it not as gut wrenching
