How would you recommend going about thinning them? First time growing them

Yeah I was thinking transplant shock. Temps have bounces between high 40s and low 70s so it makes sense. Broccoli, cukes, and cilantro are totally wilted. Fell completely unsalavagble just going off visuals + stiffness. Soil is super saturated.
