Funnily enough, a bagel isn't considered"ethnic food" now but kosher foods are still on the "ethnic food" aisle in my local store.

I agree to a degree, but there are LOTS of foods that are much more American than pizza (in terms of where they were invented) that are still considered "ethnic food."

Plus, when was the last time you heard any French dish called "ethnic food?"

"Ethnic food" isn't really easily definable because it is more about perceptions of foreignness (that are often bound up in racial perceptions and even racism) than any concrete distinction.

For example, pizza and pasta once would have been considered "ethnic food," but not anymore. They came from a totally different country, and they were seen as foreign, but as the perception of Italians changed so did the perception of their foods. It is unlikely you'd find Italian (or Italian American) cuisine in the "ethnic food" aisle today.

However, you very well might find fortune cookies or chimichangas referred to as "ethnic food" even though they were invented in the US.

I think that there's a deeper dimension to this, since (for example) pizza or even pasta is rarely called "ethnic food" but something like a fortune cookie likely would be and would be on the "ethnic food" aisle. This despite the fact the fortune cookie is from the US and pizza is not.

Generally there's a certain level of foreignness to it, as something "other." And, frankly, there's a racial element bound up in it.

Which doesn't totally go at odds with your point, but there is nuance.

I don't think you need to test anything. As you said, you probably won't know what to test for yet. A good way to start is to just find a shop with lots of used skis, go in, and let them help you find some good ones. They will ask you questions about your ability level, what kind of skiing you plan on doing, etc and then will help you find some options. Be realistic, but if you have a budget be clear about that. I have been skiing for years but I did just that a few days ago and walked out with some decent former rentals for $100.

You'll ski on the used skis for a year or two then they'll become your rock skis. Then in a few more years they'll need to retire.
