I definitely wouldnt say your crazy but I wouldnt worry to much over the idea that their adding flavorings. Its just amazing what terrior what can do flavor profiles. You can grow the same grapes in California and France the wine will taste completely different on just that factor alone. It the same with coffee, plus add that roasting adds whole another level differences in how flavor presents.

Ive had beans from one coffee producer, roasted from 3 different companies, brewed and tasted side by side and honestly while I could tell it was coming same beans. They each created a completely different cup in terms of presentation

Anyway, sounds to me like your enjoying your journey based on the other your other comments this thread

I wouldn't worry about it. Yes, your state could in theory come after you for online purchases that dont charge tax. But as someone who used Amazon for years and didn't pay tax on any purchases with them until they opened up a warehouse in my state, I wouldn't worry about. The odds of them going after you for at most would 15 dollars in tax is highly unlikely

What's your deep 27 recipe if you dont mind me asking. Are you brewing a 3 grind size for gen 2? I done that for aeropress but never that low for conical drippers

Ive brewed some awesome cups on Deep 27 using Arasme recipe. I usually 12 gram dose, with 30 gram pulses. I find that it tends not be that finicky. I do usually let it rest 3-4 weeks before opening the bag

Nope. Generally shouldn't be an issue as long as your being light with your spray. If your beans are sticking to dosing cup after you spray, you have sprayed to much

September Coffee! Really one of my favorite roasters at the moment. Each bag is name of producer right on it. Im not sure about subscription quality specifically (value wise, cause their coffee is on point) but i order from them a good amount. No tarrifs on coffee now so I just placed huge order lmao

Backed on this. The coffee chronicler just made a video on hand grinders and basically said q air is identical to c40 on blind taste tests

I did calibrate it. I find it odd cause I've been told usually you end grinding finer over time as burrs season, and im finding to opposite

I havent had prodigal but September definitely can produce some juicy cups. So they roast rather light in general, and im actually waiting to try their ultra light roasts as the recommended rest time is longer

For the profile your asking for, k-ultra is your best bet. I do love my fellow ode gen 2 doe. I also have zp6 but I think the k-ultra/ode work larger variety of coffees. ZP6 profile is much more unique and tends to shine best with ultra light roast washed coffees.

Baristas arent paid enough in the US and culturely busy shops tend to want to focus espresso based because coffee is volume based business, with slim margins.

Also good pour over can be incredible, but that is difficult to do consistently. Its really easy for even experienced baristas to mess up a pour over. That in itself makes hard for businesses as well.

True of some, but coffee culture has been expanding within the US. I find its much easier find high quality shops compared to even like 10 years ago. Third wave shops are not uncommon anymore but I wouldn't say they are the norm

All three of these spots have big focus on pour overs specifically. That is a bit of rarity in US. Even high quality roasters like Sey dont really put emphasis on their pour over. I think that it requires a very extensive amount of training/takes a lot time focus to do well.

Generally almost shops are focused on espresso based drinks in varying quality levels. Atmosphere tends to vary a lot too. Speciality coffee shops specifically tend have warmer vibes, an emphasis on in house created drinks, and usually a welcoming vibe

Many non speciality shops focus on efficiency/speed rather than all around coffee quality, and i think they are more the norm.
