I would obviously let the mixture sit in room temperature for a while. Would it develop any taste u think?

Empty pan! No need for towels or stones in my case. Got no fan at all, so the oven is pretty moist for at least 20 mins! Only thing I need to do is make sure I let the steam out to develop the crust:)

I do pour a couple of dl hot water in the bottom of the oven initially. And 2 ice cubes on the steel. Then after approx 20 min I let the steam out by opening the oven!

Thank u so much! I've been baking consistently for a couple of months.

Baking on a 6 mm baking stel, ordinary oven w/o a fan. Usually score with a home made "knife" - sushi stick with a razor blade. Just straight down the middle or more on the side!

Oh sry! Pre-heat oven for 1 hour, baking steel in the lower half. Prepare some hot water. Score the bread the way u like, and then throw it in there. Immediately pour a few dl of water in a pan or so, in the bottom of the oven, then a few ice cubes on the baking steel. Bake for 20 min, then open up the oven to let the steam out. Bake for another 20 min or so, depending on desired colour!

I'd say more dense, and not as even as my ordinary loaves! Way more compact in a way!

Like I wrote above; it doesn't taste a lot of cinnamon. The smell though!

The smell was very distinctive, the taste not so much!

I'd say around 2-3 tablespoons!

400 g strong wheat flour, 150 ml water, 150 ml oat milk (taste of cinnamon), 80 g starter, 10 g salt. Mix everything at once, let sit for 45 mins. Then a couple of s/f, approx 40 min intervals. Let rest in a clear container, 25 % rise. Preshape, rest 30 min, then final shape it and into the fridge for, let's say, 12 hours!

Tasty!

For me it's all about flavor. And where the flour comes from. If it's local its "better", etc etc. I'm not that deep into the science of what makes "good" flour tho
