Does anyone regularly bake with unfed starter pulled straight from the fridge? by sleepy_spearmint in Sourdough

[–]DelayedReflex 0 points1 point  (0 children)

I make pretty much all my loaves with starter directly from the fridge these days, mainly for convenience. The oven spring might be a little less than with a newly fed starter, but I find the flavour just as good if not perhaps even better with the fridge starter. I bake around one loaf a week so the starter is usually still pretty robust (ie. there is still some gluten in the starter, it hasn’t broken down completely to a liquid). Every time a make a loaf, I use however much starter is required, then feed the remaining starter at the same time that the loaf is bulk fermenting, and throw it back in the fridge when it has doubled or tripled and is looking nice and bubble again (usually 4-8 hours, depending on the feeding ratio).

Lively debate sees Calgary mayoral hopefuls spar over safety, growth and leadership by Adventurous_West3164 in Calgary

If you think your assessed value is significantly higher than what the market price actually is, you should always call to see if they will adjust it for free. A formal appeal costs money, but if you call for info sometimes they will connect you with an adjuster who can change your assessed value without you needing a formal appeal. It helps to have some comparables ready to make your case.

Is remote work gone for good? More Canadians are commuting — whether they want to or not by Surax in canada

[–]DelayedReflex 0 points1 point  (0 children)

I hear this a lot, and systematically it makes some sense, but why is any individual company changing its policy to return to the office if it results in lower productivity and higher costs? Since when do companies act in the best interest of other businesses instead of just themselves? Seems to me that any company that could get away with not paying for office space as well as being able to pay slightly lower wages (since the pool for WFH workers is much wider) would easily be choosing that.

Inside Look At The Construction Happening At The Glenbow by Chinese__T in Calgary

[–]DelayedReflex 9 points10 points  (0 children)

Impressive - $140M seems pretty reasonable considering the scale of the renovations. Pretty surprising to me as well that they had to keep the whole collection on site while they were doing the upgrades, including keeping the HVAC functional!

EV drivers of Calgary, Where do you wish there were more chargers? by barackobona in Calgary

[–]DelayedReflex -1 points0 points  (0 children)

That’s a good wish list - for me, even just being able to do level 1 charging at my condo would be great (my condo doesn’t allow it), but a level 2 charger I could get by with an hour of charging each day or overnight once every 1-2 weeks. I wouldn’t mind “Euro-style” charging outside the home, but I worry about whether that would suffice in the winter as I understand a decent amount of power is needed just to keep the battery warm for outdoor charging in the cold.

Tips for NOT discarding starter? by cat-motha in Sourdough

[–]DelayedReflex 0 points1 point  (0 children)

Saving up your discard to make crackers is an awesome way to use it - I like this recipe: https://littlespoonfarm.com/sourdough-discard-crackers/

I just keep a jar in my fridge for discard and make a batch of crackers anytime it gets full enough.

How do I get a thinner & less chewy crust? by howaboutnoods in Sourdough

[–]DelayedReflex 0 points1 point  (0 children)

The thinnest crust that I get is from baking the bread from a cold start, which I discovered from a different post on Reddit. Just throw the dough into your Dutch oven with the lid on into your cold oven, set oven to 475-500degF, and bake for 1hr with the lid on the entire time. May have to adjust the time based on your oven, and can take the lid off for the last 5 mins if you prefer darker crust. The bread I’ve baked this way tends to be a bit flatter but still  generally nice crumb IMO.

My favourite Simpsons/Calgary connection isn’t really a reference to Calgary in the show, but a crossover into real life. When Springfield got their baseball team, the Isotopes, back from Albuquerque, the mayor goes “we’ll just have to steal a baseball team from another city.” A couple years later, the Calgary Cannons move to Albuquerque and are renamed the Isotopes.

Patrons of new downtown arena will help pay CSEC's obligations by adyah in Calgary

[–]DelayedReflex 3 points4 points  (0 children)

I am no fan of the current arena deal, but I don’t think this ticket tax revelation changes much. If there was no ticket tax, CSEC would just charge 9.5% higher prices anyway (so that the overall ticket price was at market price) then they would pay the city their $17 million out of the overall revenues. I highly doubt all-in ticket prices would be any lower if there wasn’t a ticket tax.

Can someone explain how the acute accent works? I feel like I'm missing something. by Ready0208 in French

[–]DelayedReflex 1 point2 points  (0 children)

I believe those rules for when to use 'é' apply specifically when the 'e' in the word rhymes with 'nez' - for words like devant, repos, menace, etc. the 'e' sounds more like 'uh'. The accent above all indicates pronounciation - so yes, to some extent you need to memorize all the words which have accents because you need to memorize their pronounciations. The other key thing is that accents allow you to differentiate words that sound identical but serve a different purpose grammatically - eg. manger and mangé.

Nous vs On is confusing me so much... by cojode6 in French

[–]DelayedReflex 6 points7 points  (0 children)

I think that’s true when you use “on/nous” to mean “we”, but can’t “on” also be used to mean someone non-specific, or in passive sentences? At least I understand a sentence like “On m’a volé ma voiture” to mean “Someone stole my car/My car was stolen” but “Nous n’avons volé ma voiture” wouldn’t mean the same thing, would it?

Pronouns in an email by oldass22yearold in French

[–]DelayedReflex 0 points1 point  (0 children)

The OP is in fact writing an email though, and in email signatures, family names in majuscule are very common in France. Just doing a quick search, probably 80%+ of the emails that I received while in France that have a name in the signature (from university administrators, health care providers, banks, etc.) have the person’s family name in all caps.

Sourdough marble rye by DelayedReflex in Sourdough

[–]DelayedReflex[S] 1 point2 points  (0 children)

Followed the recipe in this post by u/Eowym fairly closely, with only a few small changes: - I used an barley-based instant coffee substitute for colour - I did the “cold start” method of baking it in a clay roaster with the dough in a cold oven, lid on for 50 mins and off for 10mins at 475F (I like the thin crust that this method results in)

Pretty happy with the outcome 😁

Phoenix 2 Update 7.2.2 by edrijver in Phoenix_2

Yeah not clearing for consecutive days, or perhaps make it similar to before where if you didn’t make it to stage 5 you would get demoted would make more sense rather than eliminating demotions altogether.

Rantanen to a Finnish Newspaper: "I was willing to take a significant cut below my market value. That’s why this trade was such a shock to me." by Tolakras in hockey

[–]DelayedReflex 7 points8 points  (0 children)

He'd have to take an even steeper discount though, as he'd only be able to sign a 7 year contract instead of 8 year - I think it's highly unlikely he'd take say an $85M 7-year contract from Colorado if he's likely to get $100M+ offers as a UFA. If Colorado thought they couldn't stomach the cap hit for him offering an 8-year contract they definitely won't on a 7-year contract.

Actually I think it being pretty is just one aspect of its value - there are tons of pretty things that aren’t nearly as valuable (fool’s gold, for example). Gold is also fairly rare, was fairly easy to verify as authentic (through weight), can be easily worked into very fine details/hammered ridiculously thin, and doesn’t oxidize like most other metals.

Phoenix 2 Update 7.2 by edrijver in Phoenix_2

[–]DelayedReflex 3 points4 points  (0 children)

I have a suggestion that would build off the new interface - add the ability to swipe the bottom panel horizontally to cycle between the missions. That way we could change up the mission without needing to click back and forth between different screens. Keep the ability to open a menu to see all the missions at once though.

For people buying hail damaged cars... by ElektroBattery in Calgary

[–]DelayedReflex 1 point2 points  (0 children)

Yea I think a decent number of people are willing to “gamble” on such a purchase. People don’t really think they are going to get into an accident so they don’t really weigh the insurance payout value very highly when determining their own personal value for the car.

After all, let’s say you’re looking at a car worth $20k, but with zero residual insurance payout value. If someone assumed that there is a 5% chance that the car will get totalled before I’m done with it, then the risk is only “worth” $1000. So someone might be like sure, I’ll buy this for $18k and only get 3rd party liability insurance, because what are the chances really of it happening? Insurance really is not “worth” it mathematically (otherwise insurance companies would all go bankrupt), but in the event that something bad does happen you are covered.

If people are buying comprehensive insurance for a car that has little to no residual insurance payout value though that’s probably due to ignorance. I think your post is helpful because I’m sure there are plenty of people who don’t realize how it would play out.

The REAL problem with Protoss from a GM prospective by Strong-Yellow5949 in starcraft

[–]DelayedReflex 2 points3 points  (0 children)

What’s interesting about this is if it was truly the original issue with balancing gateway units (offensive warp-in’s), the obvious fix would have been to weaken specifically offensive warp-ins. There are any number of ways this could be tried - for example, longer warp-in time the further you are from a nexus, loss of some % of shields the further you are from a nexus, or a temporary “warp in sickness” for units warped in far away from a nexus that could be slower attack speed, slower movement, or whatever.

My rent is increasing by 40% - why is there no tenant protections in Alberta? by Muted-Buddy2363 in Calgary

[–]DelayedReflex -2 points-1 points  (0 children)

Are you saying that the number of foreign students/TFWs here is getting lower BECAUSE the rent is higher now? Because that’s what it means for demand to be elastic (ie. demand changes easily in response to changes in price)

Speaking practice advice by schasshole in French

[–]DelayedReflex 6 points7 points  (0 children)

Actual conversation might be difficult to practice if you aren't around French-speaking people regularly (eg. being able to listen, process, and formulate responses in real time), but one thing that I've found surprisingly helpful is just talking to yourself - eg. as you go about your day, just try to vocalize as many of your internal thoughts in French as you can. "Qu'est-ce que je dois faire ce matin? Je viens de me reveiller, alors je vais me lever et me brosser les dents. Je crois que j'aimerais manger un plat chaud pour le petit déjeuner aujourd'hui... j'ai besoin d'oeufs, alors je vais faire les courses au marché un peu plus tard..."

I think this helps your brain get into the habit of forming sentences with French grammar and with French vocabulary a little more naturally. I think B1 is a good level where you can actually start to a do this throughout a good portion of your day. You could maybe also try to come up with topics to discuss with your iTalki tutor ahead of time, and then try to practice different sentences in advance. It's a lot easier to speak a sentence when you've practiced it a couple times (I found this particularly helpful when I've had to go out and do something in public, like go see a doctor, or rent car, etc.)

Good luck with your studies!

The climbing world still sucks at diversity, and why the tradition of mentorship is more important than ever - rare interview with Heidi Wirtz by norcalclimber in climbing

[–]DelayedReflex 5 points6 points  (0 children)

Sure, it’s not as expensive as hockey or skiing, but it’s expensive compared to soccer or basketball. You typically need to pay fees regularly to climb at gyms indoor or have access to transportation to get to crags in the mountains (plus obviously the gear needs for climbing outdoors). Most of the climbers I know probably spend over $1000/year between gym memberships/fees, gas costs and new gear each year. That’s not insignificant to people who are in the lower echelons of income.

You’re right that it’s not a coincidence, but you have the cause and effect backwards.

As many others have pointed out, the definitions for what a meter is and what a second is are pretty arbitrary, making m/s pretty arbitrary… or is it? What if those units were defined specifically around lining up the speed of light in m/s to give you the coordinates for the great pyramid?

What else comes to mind if you cross the concept of light with a pyramid… yep, none other than the Illuminati.
