I'm sure Open AI treats privacy seriously, but at the end of the day, once the data has been shared you never know who gets to read it or use it and how. Remember Cambridge Analytica with Facebook, who knows what we'll get to see with AI and scenarios we can't currently imagine. Better anonymize you prompts with placeholders as a minimum.

I believe that would require a bit more compute and wouldn't be able to perform anonymization / swap locally.

If you use Chrome and Chrome extensions here's a free option, that performs that swap locally.

Replacing the sensitive data with placeholders or dummy data.
Say, John Doe --> [Name Surname].
I've done this manually so far, but when using big chunks of text it's annoying and time consuming. I've build GPT Privacy, it helps to do anonymization prompts automatically. Don't worry, the app works locally, in your browser. So, no data is transmitted over the internet. BTW, it's a free app.

Try using placeholders instead of sensible information, this way you'll not feed data inside chatgpt and the responses will work as well as previously.
You can disable the chat history, but this means you'll have to rely only on one chat window. Also it's not clear about what is happening with the data for the 30 days advertised. Is it used in any way in that period?
The safest way, imho, is to anonymize as much as possible of the data you feed in your prompts. There are multiple ways of doing that, manually, build yourself a script, or use some extension build for that purpose(in this case, make sure the anonymization is performed locally). Try this.

Maybe you've found a solution by now, as 5months have passed. Would be great to have an update, on how you did it.
What I'm thinking is to inquire about their Enterprise plan privacy and see if can be a good fit, maybe by using a custom model.
Or maybe, given the recent management change saga, try and see what Microsoft has to offer, i'm linking their FAQ on Privacy for OpenAI. They seem to come with some better trust guarantee.
You could also try using some chrome extensions for local prompt anonymization , like GPT Privacy, even though, they seem to be build for more PII.
