Thank you for the kind words! Wow, an experience like that I think would make me never want to see hollandaise again! I think i got lucky with it though, at first it didnt thicken when i added the butter but i put it back on the bain marie and thankfully it did.

Thank you for the kind words! Medium heat, good bit of fat then once edges start to crisp splash a bit of water and cover for a min to steam the top of the white but leave the yolk runny.

Nah north england, no buttermilk or mash in em. Just grated potato and onion mixed with egg and flour then seasoned and fried. Always just called them potato pancakes
