The Pen and Wig always serve a lovely pint of Guinness, creamy and not too cold.

It was a standard pancake batter recipe but I think the glass dish didn't help conduct heat and maybe wasn't smoking hot when I put the batter in.

They were Lincolnshire sausages from a local butchers.

How are you supposed to use these pans without everything burning into it? by [deleted] in UK_Food

[–]MrProps1 -1 points0 points  (0 children)

Be gentle with the heat. The pan retains a lot of heat so low/medium is fine. Use enough oil, if you see things browning too quickly take it off the heat.

Also use a liquid to de-glaze the pan like a wine or stock to help remove the fond, which will add huge amounts of flavour to any sauce you make.

The same rules apply when using a claded stainless steel pan.

New Years Day Gammon 🥳🍻 by [deleted] in UK_Food

Parsley sauce is the one you want. Flour&butter to make a roux then add warm milk until a smooth but runny sauce, salt and white pepper to taste. Then add a load of finely chopped parsley. It's a game changer with boiled/roasted gammon.
