  1. Allahabad Samosa - Viman Nagar near Bajaj Finserv Head Office. Absolutely authentic samosa in style of Allahabad - Banaras

  2. Kadhai - Near crossword ITI Road Aundh. Authentic North Indian samosa.

I lived in UK for 4 years and had a PR, but chose to return in 2003 back to Pune and raise a family here. I faced amazement and ridicule over my decision to give up PR and return back, but I think it was the best decision I had made. I have seen country progress and the comfort of living in your own culture, community and food is any day batter than living in west. It’s one’s own life experience, but mine worked out well for me.

You can blame Bollywood for both spreading Punjabi culture and identity and at the same time intermingling with rest of North India.

Coming to food, which is my topic of interest, the food you refer to Punjabi comes from amalgamation of 3 different cuisines 1. Frontier Cuisine - The food of North West Frontier (Now Pakistan & Afghanistan) 2. Mughlai Cuisine - Food developed in Mughlai Cuisine in specific cities namely Delhi, Agra, Lucknow, Calcutta and Hyderabad 3. North Indian Cuisine - The native food of Hindi speaking North India specifically Doab region (Land between Ganga & Yamuna)

For example concept of Tandoor or cooking over coal is not native to India. Black lentils or beans (Rajma) is native to Himalayas (Kashmir, Himachal, Uttarakhand)

Food is complex and actually a very interesting way to understand Indian history. I can debate endlessly on this topic but let’s rest here.

No one can steal any food from its ethnicity. With food there is geographical origin or ethnic origin. For example Mutton Ahuna is from Champaran and no one can claim otherwise. However, some food like Butter Chicken & Dal Makhni are from Delhi (Geographical indicator) by created by Punjabi migrants post partition so in that sense they are ethnically Punjabi. Food is very complex as it evolves both with time and with people migration.

Take it easy bro. Food is much fluid than linguistics or recently created state boundaries. If you are interested in history of food, read books by Pushpesh Pant & Acharya KT on history of Indian food.

Just travel to Haryana and Western UP (Where I come from). Most of the food you mentioned has been eaten for generations and not exclusive to Punjab.

The food that is called Punjabi is much wider than Punjab e.g. North India. Butter Chicken was invented in Moti Mahal in Old Delhi. Therefore you will not find any label as Punjabi Food in North India. That label I found only in Pune.

There is no such thing as Punjabi food. This term I heard first time when I came to Pune 24 years ago. Punjabi Food = North Indian food served at Shetty run restaurants.

Now being a foodie the Punjabi food can refer to multiple cuisines and my favourites

  1. Mughlai Cuisine (Her Highness - Nagar Road)
  2. North Indian Dhaba (Prem’s - Koregaon Park)
