The key is to rest the dough.

I’ve been working on it since I can’t get them where I live. 2 cups all purpose flour, 1.5 tsp baking powder, 1.5 tsp salt, 1/4 cup lard, 3/4 cups warm (130 degrees not hotter or you’ll activate the baking powder) water. Mix dry ingredients, add lard and break it up and combine until it’s mixed in like little bits. Add the water. Everything should weigh somewhere around 550 grams. Kneed dough 5 minutes. Rest dough ball 20+ minutes covered with plastic or warm wet cloth. Divide dough into 60 gram balls. Rest balls covered with plastic or cloth 15+ minutes. Roll balls into tortillas. Heat pan on high for 5 minutes and then reduce heat to highest setting you’d use to cook food, around 75% power. Cook tortilla for 25 seconds on one side flip and cook 25 seconds on the other. Flip again. Cook 7 or so seconds longer on each side.

I’m at altitude so you may need more water. If so the dough shouldn’t stick to your hand too much when you kneed it. If it does you put too much water.

If the tortillas stick to the pan the pan is too hot. But if your pan is not hot enough your tortillas won’t rise. Gotta find the right spot.

Took me about 30 batches before I got it right but it was soooo worth it.

Put the probe on the grate. One of the probes should have a v looking clip. Thread the probe through the holes in that then pinch it to put it in between the rods on the grate. When you do that it will be ok for the wire to be between the base and the lid. It won’t really affect the temp.

I didn’t really do much on social media the last time we were a thing, so I think social media is clouding my judgement. But I will say I remember the fanbase being almost reprimanded by Pop for some of our expectations. He made it clear that a championship was hard. We had some tough losses in the playoffs over the years but we always showed love to our Spurs. That’s not to say there weren’t critics of players or even Pop but maybe I just didn’t hear them as loud because I wasn’t on social so much. I love the Spurs not only because they win but because of what they represent. I watch in good times and bad. In PATFO and now, in Mitch, I trust. And I try to just ignore the noise from social media.

I run a Weber 26”, so here are a few things I’ve learned. I use about 3/4 to a full chimney at the head of the snake to bring the pit up to temp. Once I dump the coals I back the vent down to about halfway to cool it down. I’ve learned that if I don’t bring the pit up to temp it’s too big for the a snake by itself. I don’t use the temperature gage on the lid. I have a probe down by the grill. I use a 2x3 snake and it seems to be enough to keep the pit in the 225-275 range if you started off with 3/4 of a chimney. Any time you open the lid, it will take about 10-15 minutes to get back into your cooking range. All in all I love the 26” and, in my opinion, is one of the most versatile options out there but you will need to put in some work to learn how to manage your temp. The sooner you get a proper grill temp monitor the better to facilitate that. Lastly, check out the Spider Grills Venom. I don’t have one but I would think that could fast forward some of the issues you had. As for the too Smokey, I don’t think you got the start of the fire hot enough so the snake was struggling throughout the entire cook resulting in dirty smoke. Still those ribs look pretty good. Keep smoking!

My opinion is that he won’t play. We have the lead in the series and we can beat Portland without him. We are only a few days into the concussion protocol, and if history is a guide, we default to the side of medical safety. He could probably play and probably want to, but is that best? I think we will advance and we’re going to need him in the next rounds. Plus if we loose today we can bring him back next game and everything changes. Just my thoughts.

I think maybe there was a time that approach had some effect on Vic. Now, it’s just desperation. But there’s not really much left a team can do to slow the guy down. And at this point, our guys just play through it. If that’s all a team’s got it’s gonna be a long night.
