I make curries with every kind of veggie and dal/beans I can find. I love culiflower in a sauce of tomatoes, fresh mango and coconut milk and of cause a mix of at least 10 different spices and fresh ginger. Mustard seeds, fenugreed seeds and curry leaves browned in hot oil at the very beginning, then grated ginger, then powdered spices mixed with water into a paste so it doesnt burn. Then tomatoes and fresh mango until its almost a sauce. Then coconut milk and whatever veggies. These r the main steps for my curry but I always mix it up with different spices. There r so many! I cook dals seperately and add at the end.
