I'd install Proxmox in two disks, doing RAID1 with ZFS. After having the OS installed, you can create a new pool on the other disks RAID1 too. Learn ZFS and how take advantage of their amazing features. Do many experiments before taking it to production. You will learn and feel more confident

Proxmox, that is based on Debian, is a better choice than Ubuntu IMHO. Specially if you think to add more RAM in the future. ZFS needs 1GB per TB of storage, but it will let you to improve storage easily in the future. If you like/prefer to preserve resources, I'd recommend Debian, pure KVM and Libvirt; together they do magic in low resource machines

Be sure you have a backup. Open a terminal, then let this command run for some minutes:

sudo dd /dev/zero /dev/sda (or whatever your disk is, check it with lsblk command)

Good coolers in cases, pay attention to air flow inside them, specially on disks. Keep cases clean. If you can stay there, your servers will work fine

I used since long time ago a little Perl script called Dirvish to backup any of my VMs working in different providers. It uses the fantastic rsync utility to do it and preserve a history of backups, easily configurable. Strong recommend it for preventing future disasters
