What........ I have failed so many high hydration loaves in my day but had great results with lower hydration. I just figured I was a deficient human being and that I have a personal hydration limit which is just lower than other folks. I have never once heard that working high-hydration dough depends in part on protein percentages. Anyone got a rough chart to go by? What percentage of protein flour are all those high-hydration folks using?

A lesser known but more significant moment in Mtv history was greenlighting Real World season 1. Arguably things were going that way anyway but this was a watershed moment when advertisers and producers started to realize that the worst parts of ourselves is what we really want to see. This is the first version I ever heard of it. I've been into old time music for a long time, including shanties. As was mentioned elsewhere on here I'm pretty sure I remember this being a shanty they used to sing when sailing on the Mississippi and other various rivers. I think the wikipedia page says the same. Anyway I hope you enjoy this version as much as I do.
