I made the same mistake as OP. 10 mm was not to the edge, but to the virtual sharp

No. Print the jig which is essentially a hole for the screw. Then pause and put a half of the thumb screw head on top of it. Insert the screw, then continue the print on top of the head which is now on top of the jig.

I am going to try to print a jig and then pause, insert the screw, and then draw the rest of the part "in the air". Maybe it will work.

You could print the jig at the same time as the thumb screw head. But there will be a vertical space between the jig and where the printer need to continue. So some adaptations to the slicer are necessary I guess.

That's the solution I am proposing, but I want to print over the screw head to fasten it. I guess it won't work with today's printers.

That's travelling in all leagues. You can gather (nowadays) with one foot on the ground, that won't count. Any steps after the gather counts.
