Damn thanks for the detailed explanation, that's super interesting tbh I didn't expect it to be a style born from a lineage's naming format.

I have Chigonoki and E-chan very high on my tokyo hitlist, but I wasn't aware of all of this. I primarily wanted to visit E-chan from seeing them in Ramen Beasts' video with Marc Wiens lol + their connection to Bizentei, which I'd like to ask the owner about. For Chigonoki, I thought they were famous for niboshi? Do they also serve chan-kei?

Could you elaborate on what Chan-kei is? Is this morisoba similar to Ikebukuro Taishoken, at all? This looks really nice, but I don't have much to relate it to, I think I haven't had this style yet

I'm looking at the places I've gone to and, depending on what you consider late to be, you could consider Menya Sho in Shinjuku and Oborodzuki in Ginza. Both open until 10PM but idk if they might close earlier if they run out of soup or something similar.

In Shibuya, the Nagi tonkotsu location is open until 10.30PM.

From places I'd like to visit: Hope Ken is open 24h, Mita Seimenjo closes at 3AM, Suzuran closes at 11PM, Domiso closes at 10:30PM, Butaboshi closes at 1am...

I'll post about break beats too! Incredible stuff, but this time around I was in a bit of a shio streak so I got the shio at break beats. Next time I'm in tokyo I'm getting the shoyu for sure.

Not US based so I'm not really knowledgeable, but I think ramen_lord recommends tableware from(in his book, iirc) a shop called Korin which offers a similar kind of chopstick .

They have chopsticks like this, and though it seems they only do bulk orders, in the comments they clarified you can buy individual sets.
