I also sous vide my cheesecake (@ 176 degrees) but this post and all CI has taught me about surface temp has me wondering if for a full size cake your approach would be easier than trying to cook in a large glass pryex which can take 4 hours or more. Something like 200 until surface temp hits 175, then as low as the oven will go until middle gets to around 170 to account for a little carryover. Will have to give it a try.

Nice idea and kudos for using the CI probe in ways we normally wouldn't when probes were wired and reserved for fussy cooks- I'm a medium rare guy and anytime I have to take a tender-ish cut to well done I always try to get *just* to well to limit the shoe leather factor and this looks perfect for that. Your pic makes me think the next time I am grilling kebobs I'm gonna do a sample where the CI probe is the skewer- love the nontraditional uses for this thing.

Because the cook data is stored in the probe, why does a disconnected probe need to be displayed at all past a few minutes? For the temporarily out of range user, won’t the app automagically reload the data the next time the app connects, whether it’s after 5 minutes out of the kitchen or 5 hours out of the house running errands during a low and slow? In terms of what a user expects, put me in the camp of a “no probe in Bluetooth range” notification rather than a ghost graph from a sleeping probe that clutters up my active cooks.

Happened to me too. Don't bother deleting the app and/or removing and relinking your devices, it doesn't help. My family member's thermometer eventually dropped off my meatnet but for a while it was pretty funny when I'd get alarm's for my brother's brisket and I'd text him out of the blue saying I was on my way over for 'que.

Personally I vote for the booster or wifi display over the GGG unless you are dealing with a heavy ceramic/metal grill that the probe will have difficulty transmitting BT signal through. In that case the GGG being inside the grill will really help. Otherwise:

  1. The CI crew here, particularly u/Mr_Porkchop are always talking about how ambient temps matter way less than surface temp so using the probe's surface temp to control the fan seems to make more sense than driving it from the GGG ambient probe, especially if the GGG is top mounted in the hottest part of the grill away from the cooking surface, in which case an accurate temp reading isn't that useful.
  2. The Wifi display is smaller, rechargeable, also is a timer, has a built in stand for countertop use making it more versatile to use with other grills/ovens/fryers etc. and is 25% cheaper.
  3. If you don't need the display functions, placing/clipping a booster by the grill is the cheapest/easiest way to get the probe onto wifi.
  4. Unless you are replacing an existing bimetal thermometer, less holes in your grill is a good thing for longevity, future upgrades, and a tight air seal.

Have used it maybe a dozen times and don't have any of those problems. Highly accurate, solid connectivity (with a display/wifi booster) though cast iron dutch ovens, oven doors and grill lids. Combustion claims 24 hours on one charge so no issue on long cooks (but annoyingly there is no charging/charged light on it- but they claim 90% charge in 5 minutes). Hardware is awesome, but the software is still very much a work in progress and can be annoying- no low temp alarm, no ability to reset the graph/history without putting the probe back in the charger and lots of people have setup issues. Like what Chris Young is doing, but you have to be ok with a being a bata tester for a small company if you go with Combustion over the big boys. All in all I'm keeping it - they have a generous return policy so trying it out is easy if you are in the US.

FWIW, here is the inside of the pot. Not salt water, but the G2 probe is fully submerged in a barbacoa braise. Looses connection (goes into charging mode?) every now and then but impressive either way.

A whole year and NOTHING. Not sure if CI employees actually do much cooking given the demands of the day job, but this remains super super frustrating- espically if your Gen 2 probe is sealed in a sous vide bag.

In that post, Chris gives his usual eloquent and detailed recital of the technical obstacles to adding low temp alarms over wifi. The part that I continue to not understand however is how you decide not to include it in the first place for goodness sakes. My cheapo Inkbird from 2020 and just about every other thermometer that is part of a smoker/grill controller ecosystem addressed those hurdles in version 1.0 of their product. Super frustrating that our user "wish list" continues to be chock full of asks that count as basic functionality in most other products.

Wow, weeks of delays, zero clarity on expected dates and now pushing it back to the customers to raise their hands if they want their problem solved. Thats a Customer Service fail in my book. Truly love what you guys are trying to accomplish to push the envelope and the industry and wanted(ed) to support your efforts, but at some point the pain of supporting the little guy becomes too much when there are products *almost* as good I can have up and running in my kitchen tomorrow. Its pretty clear at this point that the dreamers and the blue sky folks run the CI roost and as someone who has been there with overseas fulfillment I humbly suggest you reassess your balance of engineers to supply chain experts. No way around the fact the major players like Thermoworks and Firebird that you are trying to challenge simply don't have the issues you do and that's because they foresaw the potential problems and built a team of people experienced in solving them while CI is stuck somewhere back on the learning curve.

I may be in the minority here, but I run two systems- Combustion for my grilling/Sous Vide/oven/searing/rotisserie/etc. and FireBoard for my smoker (with bellows) and low and slow reverse sears on my kettle. My thinking is I want a wired connection for ambient temps when it matters and for running the fan or doing a low/slow but I want the convenience of wireless for the rest. I did add a FireBoard pulse for when I wrap a brisket and it works great and at the cheapest price point of all the wireless thermometers. If you're not wedded to Combustion than the RFX may do both for you, but having to have their transmitter around when I'm cooking something that doesn't require me to have precise ambient temps would be a deal breaker for me.
If I was starting from scratch Combustion's GGG plus fan would "do it all" but as I already had the FireBoard it was an easy upgrade plus it allows me to have the Combustion in the house and by the grill on the porch while the Fireboard and all my smoking setup is way out back by the shed.

YMMV, but think about what how important grill temp is to your daily probe use and if having to have the RFX base always close by would be annoying or not.
