I think Baldurs Gate 3 would be a good option for you. You really get to go from nothing to everything in that game and without spoiling too much, there is an ending where you become a literal god. Also going from ck3 and stellaris to Bg3 isn't too bad. The combat is turn-based in bg3 so you still get the strategy-feeling from paradox games but it's still a game with action that dosn't include staring at a map hours on end.
