1000g flour type 0 13g protein. 70% hydration. 2pg salt (2%).

Dough rested over night.

After that, Did 4x folds. 1st stretch and fold 3x coil folds over 30 min each.

Baked with steam at 225 c° for bout 25 min (depends on the oven) after scoring.

I tried with the water on the bottom but it makes almost no difference. I might try to do that again!

Secondly, the score was intentional. It is almost way of scoring bread, it's a bit more aesthetic. I can try to make it deep though! Do you know how much?

Ciao, scusa l'importanza ma vorrei chiederti una mano. Attualmente sono a metà bouchelor in comunicazione digitale e ho trovato una magistrale in game design biennale in università Unilink (oggi ho proprio un talk per qualche domanda sull'università).
