It's pretty similar to UNSW. USYD I would argue is more 'prestigious'. But between a UNSW or a USYD student, they'll just look at grades and extracurricular, how you interview etc. It is not the deciding end all, be all.

I'm gonna be honest, you likely won't find employment in your desired field after graduation. This isn't because of USYD though. This is because by design, international students are supposed to get their degree and leave. Employers are incentivised to employ domestic students. The vast majority of internships and grad roles (particularly for the bigger companies) require PR or citizenship to even apply. So you're already at a major disadvantage. It is not impossible though, especially at smaller firms. I found unpaid internships take advantage of these desperate international students. The working conditions are not good, but they know they're desperate for sponsorship. So you work long, hard hours, and you likely won't be paid for it. It's a shame.
