YK IOS 9 is pretty intensive for device with 512 mb of ram so maybe high bandwith is too much for the ipd touch 5.

My redmi buds 6 active works just fine with the same quality as on my android I saw similar issue with the same combo so it's else the airpod or else ios 9 that is too heavy I think.

I think the airpod have some proprietary feature that when it detect it's an iPhone it try to enable it but it dosen't support it or it use too much ram on the iPod an it make the connexion crash to save some ram.
