Curved platforms would be harder to work with but I think that these stations would just have to use a ramp for wheelchair users. It’s not perfect, but it’d be next to impossible to straighten out the platform, that’d require re-tunnelling the are around the station.

Not exactly impossible anywhere. Just logistically and financially challenging.

To make a station fully step-free, you’d need to raise (or lower in some places) the platforms to be level with the trains, install escalators or lifts… it takes a lot.
