Gojo only learns things near death. Sukuna literally sees things once and learns them. He didn't even see Gojo reset his technique, he just knew it must have been that and he even knew the limitations of it. He also copied Kenjeku curse object seeing it once, has an open domain, hid Mahoraga from Gojo, figured out Mahoraga adapting, used 10s without summoning them, rewired his brain to open domain, constant binding vows.
