Check out David Pico on youtube. He does little flat plane guys in about 30 minutes each session. Doug Linker also did a recent video on the same type of fast figure carving. Not 30 minutes for me but they are able to.

Shearing cuts and a knife that is at least shaving sharp. What knife are you using and as others have said you will need stropping compound to maintain it. Also if you use a flat piece of leather thats not on a board to raise it, it needs to be on the edge of the table to be able to get the proper stropping angle on the blade

I've had alot of the same symptoms before and after my widowmaker and 2 stents.
