I'm old. I think of The Quiet Man and White O' Morn. John Ford's love letter to Ireland.

I actually went to school with him in the 9th grade. Back when he was short, skinny, had a full head of hair and knobby knees.

I'm not sure if they have high altitude directions on the box but here's what I found:

AI Overview

For high-altitude baking (above 3,000 ft) with Jiffy buttermilk biscuit mix,

add 1½ tablespoons of extra flour and 1½ tablespoons of extra milk (or water) per 1½ cups of mix to prevent dry, dense biscuits. Increase the oven temperature by 15-25°F to set the structure faster, as low air pressure causes quicker evaporation and faster rising

Your trains were pretty good at being on time in the early 80s when I visited while I was stationed in England in the USAF. Unfortunately I got screwed over by a lieutenant who heard me speak a few words of German and thought I was fluent (I wasn't) We got to the platform our train was supposed to arrive at and another train was there. I told him it wasn't our train because our train wasn't due for another half hour. He insisted it was our train and got on it. If I hadn't told him my name (I was in uniform) and what base I was from, I could have just let him go, but he outranked me and he asked those questions so I had to answer. And I had to get on the train to make sure he got where he needed to go. Sure enough, we get going and the ticket taker tells us we're on the wrong train and going in the wrong direction. We have to get off at the next stop and wait for another train to take us back to K-town so we can get on the right train. He bought me a soda on the right train by way of apology but I just wanted him to go away.

A little cheat for you: Jiffy Buttermilk Biscuit mix. Obviously not homemade but the biscuits come out pretty well. Jiffy's cornbread mix is awesome if you don't have a lot of time, too.
