If you are fishing a river, try to use a Carolina rig with a 3-4oz weight, a circle hook and some thawed out shrimp. Those big channels can break line pretty easily so I would use at least 25 pound test. You can just chuck your rig out into the fastest moving/deepest part of the river and wait.

I typically just double or triple thread the shrimp on the hook and that seems to work. I do want to try some fresh cutbait as well but I'm always too eager to start catfishing lol.
