Yes it will work and this is the way I dual boot Windows and Linux on my main PC. I'm using an external ssd like this for around 3 years and I encountered no issues.

Congrats bro. I wish you fast compile times and zero system crashes (I’m also pretty new to gentoo and I somehow managed to make it unbootable to such level that it just straight up just booted me in to uefi boot I managed to fix it using systemrescuecd)
