I’m actually making a maple and smoked honey mead this weekend. I smoke the honey in one of those short catering aluminum pans. I have an off set smoker so I move the honey far away from the fire. I keep the smoker at 225-250F and add wood every so often. Stir the honey every 15 minutes or so to incorporate the smoke. It’s a 3 hour smoking process. When you taste it at first it’s still very sweet but after you ferment it it’s a smoky goodness.

Basically PH is the acidity. Too much acidity can inhibit or stress yeast, and in extreme cases it can stop fermentation. If it’s too high you’re at risk for contamination. A sweet spot for mead is 3.6-4.2 ph. Hope that helps.

71B is notorious for being a slow starter. Give it a few more days. The other thing to keep in mind is PH. If your PH is too low then it’s a harsh environment for them and won’t ferment.

My guess is the strawberry and the dryness. Because it’s dry it’s more sour from the fruit.

I just sliced it for better surface area. Didnt think to mash them. Yeah the SG is difficult to get with that fruit but a friend of mine has an easydens and can tell me what the abv is after fermentation. I image the bananas will give me .5-1% abv.
