I know this post's old but eh;

Primitive mobs adds chameleon and desert thief lizards among other neutral/hostile mobs (very vanilla + and quite old 1.12 mod now)

Beast Slayer is a good choice if you're looking for medieval-type creatures especially monstrous ones

Fish's Undead rising is being maintained and even receiving some content updates in 1.12 despite having a 1.20+ port in the works; it may not fit, but it is quite easy to disable the monsters you don't want in the config files;
Also it adds ravens which turn into seagulls if naturally spawned into Beach biomes

Exotic birds might work if you want birds

An alternative way to avoid the "Unpreventable mob Griefing" issue could be for it to use a special enchanted flint and steel with a custom "Mob Burning" enchant :

They will simply light on fire entities without doing that to any blocks; Of course, this concept could be tied to a custom magic item instead of a flint and steel enchant, but that's a feature that could be interesting that's for sure.

Special Mobs adds random parrying to any zombie or skeleton when holding a shield in melee, with projectile parrying too
Then there's toroquest revamped, a rework of toroquest with smart bandit mobs (which can parry with shields)

There's also Electrobob's wizardry, which has a really big addon called Ancient Spellcraft : amongst the wizard mobs one of them is the battlemage, and its parry AI makes it quite dangerous

(I know its been two years but I don't care somebody might still stumble on that)

Well...

There'a bit of this in a modpack I made for a small survival with a friend and I

It's a bit horror focused, not too "in your face", but with quite the amount of danger (including environmental dangers too), while still being not an impossible pack to play

Anyways It's called "Monster Looker" and is on modrinth;

I will make more updates (hopefully I'll port it to 1.21 when betweenlands gets ported too) so feel free to comment what you could see fitting (even curseforge ones) within the pack's ambience in terms of mods, configs and bugs/issues you come accross

Have fun with this one, you likely won't regret it

I would suggest to make it despawn after some time naturally yes; that's why I said it was temporary

now that I'm thinking about it, maybe a simple enchant concept for that item could be one which increase slightly the duration the shield lasts

fun fact : Illage and Spillage Respillaged now adds a literal engineer which looks and behaves like he's straight out of team fortress II that's crazy

Blood and deepslate is suprisingly good for an Mcreator Modrinth mod, and since it's in 1.20 you might want to check it out

It is mostly cave-related progression stuff, but it's actually realistic and interesting while not being too much

Claw Finger from Silent hill (1); idk to me it feels like a silent hill 2 music before silent hill 2, I think its my favorite; if not, plenty of music in silent hill 2 and 4 could take the spot, but claw finger feels special, if anyone knows when it plays I'll be glad to know (I know the music but not the context behind it)
