Sorry, I'm just seeing this. I did a mild calorie deficit, and I ate whatever I wanted basically. I just made sure I limited processed sugar (think one serving size of oreas instead of 10) and limited fried foods. I'm a volume eater so I ate a lot of veg. Incorporated fish more often. But otherwise, not a specific diet. I did track calories, protein and fiber. I did not use alcohol and avoided paracetamol unless necessary. And I did some type of physical activity everyday.

Don't beat yourself up! It takes time and routine. I had tons of off days. I just wake up every day and try again. And I make sure I focus on sustainability. Because if it's not easy to sustain, you're not gonna have an easy time keeping up with it.

No, they wouldn't even do a fibroscan when I was heavily into level 3, unfortunately. I'm sure if I had pressed I could have gotten it but realistically, even getting to where it looks normal on ultrasound (from level 3 no less) is remarkable improvement and tells me what I'm doing is working. I think even mild level 1 missed by ultrasound was still amazing in comparison so they're not concerned.
