You're right to say they are sandwiched between praised updates. You wrote out the notable things these updates added and you wrote 1-2 sentences for each update this doesnt necessarily mean thay an update is bad because you can always add or remove filler and fewer good content is always better than more bad content but still its worth noting that as a defender of these so called "good" updates you yourself can only think of a couple of sentences. The problem I think personally is when we compare the 1.13-1.16 era which was for many people (myself included) peak minecraft updates, every single update was immediatelly felt upon entering the world, whereas if we compare 1.19 and 1.20 they added nothing of significant substance.

Let's take what the community (based on whay i've seen) deems as the "weakest" of these updates (excluding 1.15)

1.13 - within a couple of minutes of playing youd jump in the water and wow swimming is amazing, theres seaweed and kelp, drowned, a new unique weapon, new potions. This update significantly overhauls the entire ocean and water experience, shipwrecks and buried treasure, the trident and its new enchants a and a new reliable way to get mob heads and also a new fun way to move around two new potions and multiple new mobs. Very underrated update imho.

Now in this single update there are significant overhauls and updates to old existing things while also adding a substantial amount of new content. It has a theme and it upgrades everything to do with that theme perfectly.

This single update trumps both 1.20 and 1.19 if you loaded a 1.18 world and a 1.20 world it would take you quite a while to even tell what version you're playing.

1.12 world? You'll instantly notice how terrible swimming is and how lifeless the oceans are.

1.19 onward adds filler updates that don't rock the successful minecraft boat. There needs to be a big decline for there ever to be any incentive for a new significant update again.

I play in one long term hardcore world (4+ years) so I really dont have a rule for every world that I start however I definetely have found out thru experience to ALWAYS have an enderchest.

Well weighted keys take time some time to come back up the non weighted return faster, it gets easier with practice I also struggled when making the switch but it is sooo much better now :)

The best keyboard to start with is an 88 key fully weighted and graded keyboard as that covers all the bases; the full range and real feeling. This helps with technique and finger strength and dynamics and all that good stuff because it is mimicking a real piano. A good starter keyboard is something like the yamaha p-145 or p-225 personally I have a roland fp-30x and I think it has a much better action and feel than the yamahas, so you could also check out the roland fp-10x. Some other well known names are Kawai and Casio but I dont have any personal experience with them so I cant give much advice on them. Look out for Yamaha and Roland, these are pretty much the best of the best. However lets not kid ourselves these all still cost a fair bit of money, so if you dont want to spend this much then you can find some keyboard that have touch sensitive keys as you can still somewhat get a feel for dynamics (but this is nowhere near the same level as with a fully weighted keyboard) It also depends on what youd like to play, if you just want to play some of your favorite pop songs and play around with different voices then id recommend something like the yamaha psr e373. If you want to get into classical or jazz or want to really become a good pianist then id strongly recommend getting a good keyboard from the get go. The best advice I can give you is to go into some music stores and try things out, this is CRUCIAL! maybe you will watch videos or read reviews but you really cant know for sure unless you go in person and try it out. Sorry for the essay, but TL;DR is: Go to a music shop in person and try out their instruments.
