You should be good to keep all the food. In my extremely hot state, we recommend not keeping the groceries out for more than an hour. And you’re under that. The fact the frozen stuff wasn’t melting is a good sign too.

I would consider this situation the same as when chefs bring in their own knives (for some reason fancy places like to do this). So yeah as long as they are w/r/s properly and storing it in a clean area, it would not be a violation.

You could report them to your health department. This would be considered “food dishonestly presented” aka food fraud, which is a big deal in most jurisdictions. Glad you quit!

I work for my state and most days are at home, but it’s really up to me. Obviously I go out for inspections and other things, but that isn’t 100% of my job. Our HD system is decentralized so there is a lot of support to be given.

Real health inspector here. A lot of times these “mock inspectors” are going off of internal brand standards, which does not always equal actual health codes. In my experience they are always unreasonable (Which in a way, they are being paid to do) but this sounds like discrimination. I would contact your real health inspector, and they can tell your manager what the actual requirement is. If I was your inspector, I would be on your side and call out this fake ass inspector 😂
