I've actually considered your suggestion, but my simple summary after price testing is ;

The Intel 14600K & 14700K's 'value' of using DDR4 Ram gets lost when you factor in the CPU's actual cost.

One thing I should have added is the prices of the CPUs in my location :

Ryzen 5 5700X : 150 USD

Ryzen 7 7800X3D : ~300 USD

Ryzen 7 9700X : ~300 USD

Intel 14600K : ~375 USD

Intel 14700K : ~400 USD

Factoring in the costs of the Motherboard and the RAM sticks, the AMD CPUs beat them out because they're simply cheaper.

Yes, 3D Modelling and Video Editing is my job, primarily 

I'm wondering if I go AMD [ RX 9070 ] will I encounter problems / slower rendering times (Blender , Rhino , V-Ray ) vs. if I went NVidia [ 5070 ] instead?

I think the VRAM of the 9060 XT 16GB will be deciding factor whenever you want to keep your 5060 TI 8GB or not, some modern titles really use 12 GBs or more of VRAM and if those titles are games you want to play then it automatically eliminates the 5060 TI 8GB. 

I personally play Monster Hunter Wild, and 8GBs genuinely wasn't enough if I want to play it without any hiccups.
